Getting bored of baked chicken? Why not give this sweet and sour chicken drumsticks a try. Makes a perfect meal with a salad.
8 chicken drumsticks (雞腿）
1 tablespoon of baking powder （泡打粉）
1/2 teaspoon of sea salt （海鹽）
1 teaspoon of black pepper （黑胡椒）
1 teaspoon of smoked paprika （甜椒粉）
1 tablespoon of sesame seeds （芝麻）
1 tablespoon olive oil （橄欖油）
2 cloves of minced garlic （蒜蓉）
1 minced shallot （乾蔥蓉）
3/4 cup of bone broth or chicken broth （大骨湯/雞湯）
2 tablespoons of apple cider vinegar （蘋果醋）
3 tablespoons of keto maple syrup (i used choc zero) （生酮楓糖漿）
1 tablespoon of liquid aminos or soy sauce （豉油）
1/4 teaspoon xanthum gum
3 tablespoons of monk fruit sugar （羅漢果糖）
1. Preheat oven to 120C.
2. Wash the chicken drumsticks and dry with paper towels. Place the drumsticks in a large ziploc bag. Add the baking powder, salt and pepper. Mix until the chicken drumsticks are evenly coated.
3. Place the drumsticks on an oiled wire rack. Place the rack on a baking sheet. Bake the chicken for 30 minutes. Increase the heat to 200C and bake for another 30 minutes until crispy.
4. Whilst the chicken is baking can make the sauce. Heat the oil in a pan. Add garlic and shallots fry for a minute. Add the chicken stock, vinegar, maple syrup, sugar and liquid aminos. Cook over low heat until sauce thickens. Sprinkle the xanthum gum to further thicken the sauce. Set aside to cool.
5. To serve, can drizzle the sauce over the baked chicken drumsticks and sprinkle the sesame seeds. You can also serve the sauce on the side
